There are some things at Disney that are just too good to wait for in between visits. Years ago I “adopted” some of my favorites as my own and now make them at home. It is a great way to keep Disney alive at home and brings my tired teens to life when they come downstairs to find out what that aroma is that has taken over the house. I also cook special Disney meals when we get together with family and friends to plan joint trips. It really gets us into the planning spirit.
One of my favorite desserts at the Magic Kingdom is the Ooey Gooey Toffee Cake at Liberty Tree Tavern. It is a delicious vanilla cake with a gooey toffee filling, oozing with chocolate chips and toffee chips. At Walt Disney World, it comes fresh from the oven and is topped with vanilla ice cream and more chocolate and toffee chips. At my home, it is served just the same way.
Here is the recipe:
Cake Bottom:
Ingredients:
1 box yellow cake mix
1 large egg
1 stick butter
Method of Preparation:
Mix only these 3 ingredients and put in a greased baking pan 13″ x 9″.
Cake Filling:
Ingredients:
8 ounces cream cheese
3 eggs
1 teaspoon vanilla extract
1/4 cup butter
1 cup semi-sweet chocolate chips
1 cup Heath bar pieces
1 pound powdered sugar
Method of Preparation:
1. Put cream cheese in mixer.
2. Slowly add eggs and vanilla.
3. Add butter and mix well.
4. Put in powdered sugar, then add chocolate chips and toffee pieces.
5. Just mix; do not over mix.
6. Put on top of Cake Bottom in pan.
7. Bake at 325 for 35 minutes, then check.
I hope you will think about making this special Disney treat, in all its gooey goodness, sometime soon. It’s very easy to put together, but ovens do vary so be sure to keep an eye on it as mine took a while longer to cook than the recipe.
At the Liberty Tree Tavern, this delectable treat is offered at lunch only – but at my house, we can have it anytime we want!
